Everyone's favorite German chocolate dessert with a chilled twist. Dive into a Black Forest chocolate bombe with chocolate sauce and cherry kirschwasser coulis. Set off nicely with kirsch cherries, sugar garnish, and mint.
Chef Ian's first words about this were, "The mint saved your plate." And he's right; it's otherwise very drab. I should have done something different with the chocolate and cherry sauces, other than making the bombe swim in them. Of the four, though, tastewise this was his favorite. The bombe is made of devils food cake, chocolate ice cream, kirsch mousse, and ganache.
