Something sweet from Thailand. Bite-sized filo envelopes of baked bananas and rum syrup, accompanied by toasted coconut ice cream, caramel sauce, and mint.
Again, I got docked for portion size. My
envelopes were a little more than bite-sized, and they were soggy by
the time I served it all. But it was delicious, and Chef Ian liked it. I used Krung Thep as the Thai city rather than Bangkok, mostly because I didn't want that 80s song going through my head all week.
