Tarts are any pastry with a shallow pastry crust, some kind of filling, and no top crust. An open-faced pie. They manage to convey a feeling of delicacy and refinement, snootily lording over their poor cousins, Pie.
Frangipan tarts are baked with almond paste and usually some kind of fruit. I used berries for mine, and this is my second favorite tart.
And these are my very favorite. They were a major hit with my boyfriend's coworkers, when I made him take my leftovers to work so I wouldn't eat them all. It started with a sweet crust, almost a shortbread, coated inside with white chocolate, filled with raspberry pastry cream, then topped with fresh raspberries and drizzled in white chocolate. I felt very fancy, making these, and even fancier eating them.
I'm a huge fan of the white chocolate and raspberry team, as my work clearly shows.
